These lettuce wraps area play on crispy duck pancakes, a popular dish found in Chinese restaurants. The combination of flavours compliment each other so well it seemed a shame to add anything else in but some grated carrot or spinach leaves would work well if you fancy a change.

You will need
- 50g cooked chicken torn into cm pieces
- 1 spring onion, shredded
- 2cm piece of cucumber, cut into small pieces
- 1 tsp hoisin sauce
- 1 tbsp mayonnaise
- 4 large lettuce leaves, such as iceberg, little gem or romaine
What to do

Stir together the chicken with the onion , cucumber, hoisin and mayonnaise.

Lay the leaves out and divide the chicken filling out between them. Place the leaves on a serving plate.

To eat, hold all of the sides together of the lettuce leaves to hold in the filling and enjoy!
Hoisin sauce is a traditional Chinese dipping sauce. Made from sweet potato, it can also be made from wheat or rice too. Choose the lovely thick Hoisin for this recipe or substitute with plum sauce if you like.
The lettuce leaves need to be a good size to be able to be wrapped around the filling. Secure them carefully with a cocktail stick if you like but the lettuce does tear easily.
