There are lovely Christmassy colours in this salad. If you don't like mayonnaise try using yoghurt or even fromage frais.
Radish have a peppery flavour and a brilliantly crunchy texture. They are great for adding texture and colour to a salad. Different times of the year produce different colours such as purple, red and white with varying degrees of spiciness.
Serves 4 as an accompaniment

Ingredients
- 10 radishes, thinly sliced
- 1 small carrot, grated
- 100g white cabbage, thinly sliced
- 2tbsp pumpkin seeds
- 2tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lemon juice

Place all of the ingredients into a large bowl and stir together really well.

Serve with homemade burgers, wholemeal buns and sweet cherry tomatoes.
