Chop-suey greens 

(Chrysanthemum coronarium var. spatiosum)

Chop-suey greens is an easy to grow vegetable, highly valued for the aromatic flavour of its deeply cut, bright green foliage, which becomes bitter once the plants flower. The petals of the flowers can also be used in cooking.

It is either eaten raw in salads, steamed like spinach or used in stir-fries. The leaves quickly wilt once picked, so it is best to harvest them as required.

 

Sowing

Sow thinly 2.5cm (1in) deep from April to September in rows 15cm (6in) apart. Thin seedlings to 7.5cm (3in) apart.

Growing

Keep well watered in dry periods.

Harvesting

The smaller the plant the milder the flavour, so start harvesting when plants are around 12.5-15cm (5-6in) high – around six weeks after sowing. Continue to harvest the leaves until you're ready to enjoy the flowers.
