Ruby chard produce beautiful, attractive and tasty leaf stems

Leaf beet/chard 

Leaf beet or chard is a much underrated vegetable, now becoming more popular thanks to the cultivars with brightly coloured leaf stalks and the revival in growing ornamental vegetables.

It is similar to, but easier to grow than, spinach - as it is less likely to go to seed in dry weather - and one sowing will produce a crop for many months.

 

Sowing

Sow seeds thinly 2.5cm (1in) deep, 10cm (4in) apart in rows 37.5-45cm (15-18in) apart from April to July; April is the main sowing month.

Growing

Thin out the seedlings to 30cm (1ft) apart.

Water during prolonged dry periods; mulching will help conserve soil moisture.

Cover plants for overwintering in October with cloches or protect the crown with straw or similar material and cover with fleece.

Harvesting

Pull off the outer leaves when they are large enough for the kitchen; don't wait until they reach maximum size.

The thinnings can also be used whole.
