Aster scaber
rough-leaved aster
A hardy herbaceous perennial, to around 1.2m in height, used as a spring vegetable in Korea but also makes an impressive ornamental, with large, scalloped green leaves and masses of white, daisy-like flowers appearing in late summer to autumn which are loved by pollinators. The herby, earthy-tasting leaves can be harvested in spring when young, or older leaves can be dried and rehydrated later. Can be used raw or cooked in stir-fries or as a wrap for seasoned rice and vegetables
