Northern Streamside Garden Tasting Menu 13 June 2025

1. First Course – “Mist on the Water”
Chilled Pea & Sorrel Velouté
With foraged wood sorrel, mint oil, and a horseradish snow
Served with a crisp shard of sea salt rye cracker
Evokes the morning mist rising off a cool stream, green and vibrant with spring growth.

2. Second Course – “Stone & Moss”
Chalk Stream River Trout Gravlax
Cured with dill, gin, and juniper, served with pickled cucumber, wild fennel, and puffed barley
Presented with edible lichen tuile, pickled chive bloom and watercress emulsion
A tribute to trout pools and mossy stones under tree-filtered light.

3. Third Course – “Among the Alder Roots”
Roast Guinea Fowl with Nettle & Wild Garlic Stuffing
Served with charred young leeks, and a birch sap reduction
Accompanied by a smoked mash infused with lovage
Earthy, tender, and aromatic — as if pulled from a shaded forest edge.

4. Fourth Course – “Twilight Bloom”
Elderflower Panna Cotta
With poached gooseberries, candied angelica, and a drizzle of meadowsweet syrup
Finished with a crisp oat crumb and a violet petal garnish
Light and floral, capturing the fleeting fragrance of dusk by the water.
