How to make a sun tea with Hackney Herbal

Nat Mady, from the social enterprise Hackney Herbal, talks us through the process of harvesting your herbs, particularly mint, and then using the sun’s rays to brew a delicious tea.

You can join Nat at the Chelsea Late in September where she will share more recipes and tips for herbal teas.

In this recipe she uses Salvia rosmarinus (Ro) (rosemary), Melissa officinalis (lemon balm), Mentha × piperita (peppermint) and Mentha × piperita f. citrata 'Orange' (orange mint).
